Am I buying one piece or two?

It depends on the option you select. Options that begin with “2-Pack” ship as two separate Large pieces — either matching flames, or one red and one blue. Any other option is a single piece.

Which size should I choose?

Small stands 5.51 inches tall with a 4.72 inch wingspan and suits a standard bookshelf, desk or nightstand. Large stands 9.06 inches tall with a 9.84 inch wingspan and needs an open shelf or mantel with room around it. If your shelves are tightly spaced, choose Small.
